Coming in the Fall of 2017 plans are to naturally raise Icelandic Sheep. the Icelandic breed of Sheep is a three purpose sheep which provides a well sought after fleece for hand crafters, fine meat and abundant high fat content milk. Monte Verde Farm plans to develop a variety of sheep milk cheeses for the discerning home and gourmet markets. In addition, Monte Verde Farm plans to have available whole Spring lambs for the ethnic market.
Coming in the Fall of 2017 plans are to naturally raise Nubian Goats. The Nubian is a dairy goat variety which provides high fat milk for cheesemaking and delicious and very healthy meat. Monte Verde Farms plans to develop a variety of goat milk cheeses for the discerning home and gourmet markets.
In addition, Monte Verde Farm will have available Spring Cabrito for the ethnic market.
In the Spring of 2016, we began looking for a breed of chicken that would provide a good supply of eggs and that could also supply our farm with a delicious and healthy meat source. After trying Buff Orpingtons, Plymouth Barred Rocks, Red Rangers and Speckled Sussex we decided to concentrate on the production of the Buff Orpingtons and the Plymouth Barred Rocks and to phase out the others. This Spring and Summer we will also be testing the American Bresse in our operation. The American Bresse is an American raised chicken from the genetics of the French Poulet Bresse, which is said to be the most delicious tasting chicken in the world. In the future we plan to acquire a high capacity incubator and to begin raising our own chickens from eggs. Chickens are raised on pasture in chicken tractors that are moved through the pasture so that the chickens are eating what chickens naturally eat. Our pasture salad bar is supplemented with organic, non-gmo, non-soy feed from a local provider.
In the Fall of 2017 we will be adding four young guilts and one young boar to Monte Verde Farms. We are planning to raise the Mangalitza Hog. Mangalitza hogs which has origins in Austria and Hungary are known as the "wooly pig" as they often resemble sheep and their meat is considered to be the Wagyu of the pork world. The red meat of the Mangalitza is well marbled with a high fat content which makes it delicious and unlike commercially common pork which is touted to be the "other white meat" the Mangalitza when raised naturally on pasture and forest is high in beneficial Omega-3 fatty acids. We plan to market half hogs full hogs and a variety of specialty cuts. In the future we plan on developing a charcuterie line from the Mangalitza which lends itself to the making of charcuterie products.
In the Spring of 2016 we acquired three hives locally and we are working to expand our colonies. We will have some honey for market in 2017 as we grow our apiary.
Our Market Garden and Orchard
We began preparing our vegetable market garden the Summer of 2016 and planted 32 dwarf fruit trees of various varieties surrounding the garden. We have espaliered the trees surrounding the vegetable garden. a system which allows us to plant more trees in a smaller space by maximizing the amount of sun on the trees. We plan on fully planting the garden Spring/Summer of 2017. We plan to grow our produce from seed and our seeds come from an organic heritage/heirloom seed provider. We have selected a secondary area to expand our production and we are planning on having our hogs help us clear and prepare the area. We will also begin constructing a spring fed water structure to grow Watercress and a greenhouse to expand our growing season.
